Same winemaking as for the Savigny-lès-Beaune. One of the few St-Aubin vineyards which is not a premier cru! Foot crushed and fermented in big barrels with no sulphur until after malo. No racking or bâtonnage. About nine months in barrel and three in tank. More lifted and aromatic than the Savigny. Citrus and stone fruit but a little smoky too. Dry and smoky on the palate, with gentle white fruit flavours and more noticeable freshness than on the Savigny. Really good concentration and length. And again a touch of that salty character. (JH)
