Deep garnet-purple colored, the 2007 Cabernet Sauvignon Beckstoffer To Kalon Vineyard T6 is just starting to move into tertiary spice box and meaty characters with notions of Chinese five spice, charcuterie and tapenade over a core of baked blackberries, cherry pie and espresso plus a touch of dried herbs. Full-bodied, rich, spicy and opulently fruited with a velvety backbone and wonderful freshness, it finishes on a savory note.

Schrader’s 2006 and 2007 Cabernet Sauvignon Beckstoffer To Kalon T6, also from my cellar, were showstoppers. The 2007 was voluptuous, racy and exotic, with seamless, silky tannins and fabulous balance. I found it a bit heavy next to the 2006, but that is splitting hairs at this level.
