A very good vintage in the Cape. Two hours' maceration, then 16 days in 228-litre Burgundy barrels and 284-litre stainless-steel drums, 30% went through malolactic conversion. Aged 7 months and bottled October 2020. RS 2.6 g/l, TA 4.18 g/l, pH 3.4. Screwcap. Yet another TWS wine that is so perfectly balanced between fruit and winemaking, fruit and elegance. There's a definite aroma of oak – mealy and a little spicy, but it doesn't overwhelm the citrus purity. Just slightly cedary. Tight, crisp and sophisticated in its use of oak.
