Cambridge Distillery is unlike any other gin producer. Husband and wife duo, Will and Lucy Lowe, have created an award-winning vacuum distillery of unrivalled quality and provenance. The Spring/Summer 2020 biannual release is made from botanicals harvested in a six-month period. Each fresh, local, seasonal botanical is distilled individually by Master Distiller Will Lowe MW with the temperature, timing, pressure and six other variables tailored to each one’s needs. This citrus iteration features lemon thyme, lemon balm and lemon verbena. The nose opens with a spritz of citrus: fresh lemon peel backed up with a dash of grapefruit, grounded by fragrant juniper and wrapped in the lush, green mintiness of thyme. Continuing the aestival theme, the vibrant palate brings in a grassy verbena, coupled with the floral elements that underpin a Cambridge Gin signature.
